Combe St Jean is a tribute to those cold and narrow valleys which hollow the gentle limestone slopes of the best terroirs of Burgundy. The vineyards surrounding these combes often show the best conditions for growing Pinot Noir and Chardonnay, the two main grape varieties of Burgundy.
Traditional Burgundian vinification with a 2 to 3 day maceration period at cold temperature (13-14°C). Daily pumping-over and punching of the cap during the fermentation. After a 14-day maceration period, the wine is being racked off. 25% of the blend is aged in French oak barrels for 9 months.
